Photographs By Adan Chung A lattice-top pie is impressive and showy, but much easier to do than it looks.
Step 1.
After cutting the rolled-out dough for the top crust into 1/2-inch-wide strips, take the two longest strips and place them at right angles across the middle of the pie. Let the ends hang over the edge.
Step 2.
Take the next two longest strips and place them on either side of the bottommost center strip.
Step 3.
Bend back this center strip and place a strip perpendicular to the bent-back strip and on top of the strips that are not bent back.
Step 4.
After replacing the bent-back strip, bend back the two strips to either side. Continue bending back alternate strips in order to “weave” the lattice, using shorter and shorter strips as you move toward the edges of the pie.
Step 5.
Weave strips on both sides of the pie, and when the pie is completely covered, trim the ends of the strips even with the rim of the pie. Press lightly to make the ends stick to the crust edge.
