| Grilled Garlic-Cheese Bread | Since summer can be way too hot for traditional oven baking, this garlicky cheese-topped bread lets you stay outside by the grill.--Angela Shelf Medearis Total time: 30 minutes Hands-on time: 25 minutes | | | | Ingredients: 1/2 cup extra-virgin olive oil 1 clove garlic, minced 1 teaspoon basil 1/2 teaspoon oregano 12 slices (3/4 inch thick) Italian bread 1/2 cup shredded part-skim mozzarella cheese 1/2 cup grated Parmesan cheese | | | | 1. Preheat the grill. 2. Meanwhile, in a small bowl, combine the oil, garlic, basil and oregano. Lightly brush both sides of the bread with the herbed oil. Sprinkle one side of the bread with the cheeses. 3. Place the bread, cheese side up, on the grill, toward the outer edges, where it's cooler. Cover and grill for 1 to 2 minutes (watch carefully), until the cheese melts and the bottom of the bread is toasted. Cut each slice into wedges.
